I know plenty of Catholic churches that do communion under both species with only 1 priest.

Anyway, I’m not sure of their exact reasons, as each church may be different, but Catholic teaching is that Jesus is fully present in either species so it’s not like you are getting less Jesus, per se.

Churches may only use one species to save costs – that’s really the only reason I can think of. I’m sure someone else has a better idea.
